Mold in commercial structures

I have a mold project in a restaurant... hot water linbe in a wall burst and flowed for weeks until discovery. The damage is pretty extensive and will require the restaurant to shut down for approximately five weeks.  While this is a high-end restaurant, and the loss of business will definately be felt, the management realizes how important it is to do the job correctly and completely. This is a very complicated job, with fire suppression, ventilation, etc. I dont know yet who the contractor will be but I know he/she has a big job ahead.
